I am by no means a chef, cook or anything the like. I don’t even know if I have a special dish…
But I do have a kid with an eating disorder, Aversive Restrictive Food Intake Disorder (we will go over this in another post). And I’m a single parent. Which means I have had to be incredibly creative! It also means our recipes are NOT for a calorie restricted diet. Lots of cheese, lots of butter or margarine or mayo. Always calorie dense.
So, without further ado…my midweek masterpiece recipe.
2-3 cups your favourite dry pasta (or leftovers in the fridge or any old pasta really)
1 can pasta sauce ( i buy the 680mL)
500g cottage cheese
1 lb. ground meat (chicken, pork, turkey, beef depending what calorie load you want)
Spice how you like, my kids are boring.
Pre-heat oven to 350 Celsius
Cook pasta until al dente. It will finish cooking in the oven so don’t overcook it. Cook the ground meat thoroughly. After rinsing pasta, add can of pasta sauce to pot and fold in. Yeah, I said fold. Does it sound fancy? When done, you will want to use a casserole dish of decent size. You will want 3 equal layers of the pasta and sauce. Put a layer of noodles and sauce on the bottom of the casserole dish. Layer all the meat on top of the pasta. Add another layer pasta and sauce on top of the meat. Scoop the entire contents of the cottage cheese on top of this layer. Add final layer pasta and sauce.
I use the cream cheese on top cut into little cubes. Then put the shredded cheese on top! I told you we make these with LOTS of calories. The goal is quick and easy, with every bite being 1000 calories. or something like that. I’m not a scientist. Or nutritionist. I’m a mom…EAT!
Once you are done layering and adding the cheese on top, put in oven for 20-30 minutes. Not picky. it’s just to heat the layers and melt the cottage cheese.
